Tasty Panettone

A classic Italian dessert enjoyed all around the world, panettone is a must during the holiday season. This spongy and sweet loaf is studded with brandy-soaked raisins and chopped candied figs for a swoon-worthy bread that will add the finishing touch to your Christmas table!

  • 1 cup raisins
  • 1 cup brandy
  • 1/2 cups cow's milk, hot
  • 3/4 cups sugar
  • 1/2 tablespoons active yeast, 1 envelope
  • 3 1/4 cups flour
  • 3 eggs, at room temperature
  • 1 egg yolk
  • 1 tablespoon lime peels
  • 1 tablespoon lime juice
  • 1 tablespoon salt
  • 1 stick unsalted butter, 1/2 cup
  • 1 cup candied fig, chopped

  • In a pot, place rum and raisins, bring to a boil, and cook for 2 minutes. Remove from heat and let cool.
  • Mix milk and 2 tablespoons of sugar in a deep container. Add yeast and let rise for 5 minutes.
  • Add ¼ cup of flour to the milk and yeast mixture. Mix with a mixer. Add eggs, egg yolks, lime juice and peel, salt, and ⅔ cup of sugar and mix until a homogenous dough is formed.
  • Add remaining 3 cups of flour little by little. Make sure the mixer is at low speed to keep the flour from flying out.
  • Add butter little by little and beat until smooth and glossy for 4 to 6 minutes.
  • Remove raisins from brandy. Add raisins and chopped fruits to the dough and mix slowly until incorporated.
  • Transfer dough to a lightly greased deep container and cover with plastic wrap. Let rise at room temperature for 2 to 3 hours until dough doubles its size.
  • The panettones should be baked in empty and clean coffee or evaporated or condensed milk cans.
  • Grease cans with butter and line bottom and sides with parchment paper.
  • Gently knead the dough with a bit of flour. Divide dough into two and place each portion into a can.
  • Cover cans with parchment paper and let proof for 2 hours.
  • Preheat oven to 356 °F. Prepare egg wash with one egg yolk and water and brush panettones.
  • Bake until the domes of the panettones are golden-brown for 35 to 40 minutes.
  • Unmold tasty panettone and let cool on a rack.
