Three Kings Bread Cookies

Everyone will love this fun-sized version of the traditional three kings bread!   • Preheat oven to 356 ºF.
  • In a mixer, combine butter and icing sugar. Using the whisk attachment mix until soft and fluffy. Add egg, yolk, and orange zest. Mix for 5 minutes on medium speed.
  • Add flour and milk little by little. Mix for 5 minutes until a smooth dough is formed. Cover cookie dough with plastic wrap and refrigerate for at least 40 minutes.
  • For the crust: In a bowl, combine butter, sugar, and flour and mix for 5 minutes or until mixture is fully incorporated and doesn’t stick to the bowl. Set aside.
  • On a floured surface, roll dough until a 0.3-inch-thick roll is formed as shown in the video. Cut into 3.9-inch-long strips and join the edges to make mini three kings breads and top with crust. Transfer cookies to a baking sheet and set aside. Freeze cookies for 10 minutes.
  • Remove three kings bread cookies from the freezer. Bake for 10 minutes at 356 ºF.
  • Remove cookies from the oven and let cool. Brush cookies with apricot jam and garnish with guava, quince, and tecojote paste strips. Serve three kings bread cookies with a glass of milk on the side.
