Thumbprint Cookies

  • 2 cups butter, at room temperature
  • 1 3/4 cups icing sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 3 1/2 cups flour
  • 1/4 teaspoons salt
  • 1 cup icing sugar, for the frosting
  • 2 tablespoons orange juice, for the frosting
  • 1/4 cups apricot jam
  • 1/4 cups blackberry jam

  • Preheat oven to 356 °F.
  • For the cookie dough: Beat butter and icing sugar. Add eggs and vanilla essence. Add flour and salt. Mix for 3 minutes on low speed.
  • Make small cookie dough balls. Place on a baking sheet. Using your finger, gently press the center of the balls. Bake for 15 minutes. Let cool. Set aside.
  • For the glaze: Mix icing sugar with orange juice. Set aside.
  • On a rack, decorate cookies with glaze. Add butter.
  • Enjoy thumbprint cookies with a glass of milk.
