  • 1 1/2 cups cajeta, divided, ½ for the tres leches, and 1 cup for the filling

  • Preheat oven to 356 °F.
  • For the sponge cake: Whisk egg whites and sugar to stiff peaks. In another container, whisk egg yolks and sugar until doubled in size. Add vanilla and orange zest.
  • In a bowl, fold egg whites into the egg yolks. Add sifted flour little by little and fold gently to keep the preparation from deflating.
  • Pour mixture into a previously greased and floured pan. Bake for 25 minutes or until cooked through and let cool completely. Unmold and slice torte sponge cake two obtain two layers.
  • For the tres leches: In a pot over low heat, heat whole milk, evaporated milk, table cream, ½ cup of cajeta, and rum and stir until incorporated. Remove from heat and let cool.
  • On a chopping board, level sponge cakes and spoon tres leches mixture over the sponge cakes. Pour cajeta over one of the sponge cakes. Place remaining sponge cake on top. Refrigerate for at least 1 hour.
  • For the frosting: Mix whipping cream and sugar until doubled in size.
  • Frost tres leches cake with whipped cream. Garnish with cajeta and refrigerate until ready to serve.
