Valentine’s Day Strawberry Pie

  • 3 cups strawberries
  • 3/4 cups sugar
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 3 tablespoons cornstarch, previously hydrated in water
  • 4 cups flour, 1.1 lbs
  • 1 tablespoon salt
  • 1/4 cups sugar
  • 1 cup lard
  • 1 cup butter, cold
  • 1 drop pink food coloring
  • 2 egg yolks
  • 1 cup water, cold
  • some strawberries, for serving

  • For the strawberry compote: In a small pot, cook strawberries, sugar, lime juice, lime zest, and hydrated cornstarch for 30 minutes or until thick. Set aside and let cool.
  • For the dough: In a mixer with the flat beater attachment, mix flour, salt, sugar, lard, butter, and pink food coloring. Add egg yolks, cold water, and mix until the dough turns pink. Set aside.
  • Line a tart pan with previously rolled out dough and press with your fingers to form the base of the pie. Refrigerate for 10 minutes.
  • Fill pie with strawberry compote
  • Roll out remaining dough with a rolling pin to make the pie crust. Use a heart-shaped cutter and cut out a heart in the center of the crust. Cover pie with the crust, brush with egg wash and form the edges of the pie. Remove excess dough, brush with egg wash, and sprinkle with sugar. Bake for 30 minutes at 356 F.
