Authentic Tascalate

Chiapas is a place full of magic and delicious beverages and we bring you a piece of both through this tascalate recipe! Tascalate is a very traditional and outrageously good corn-based cooler from Chiapas. Nothing can be as simple as combining corn, cocoa, cinnamon, achiote paste, and water to prepare this oh-so-delightful drink!

  • 3 cups corn, dried
  • 2 tablespoons cocoa
  • some cinnamon stick
  • 1 teaspoon achiote paste
  • some water
  • sugar
  • some ice cubes

  • Heat griddle over medium heat and toast corn kernels until golden brown.
  • Toast cocoa and cinnamon.
  • Grind all ingredients in a food processor, grinder, or metate (mealing stone) to a powder.
  • Mix tascalate powder, water, and sugar.
