Authentic Tejate

Cacao, mamey seeds, hominy corn, and honey team up to create this magical concoction! This authentic tejate recipe is a delight to drink and prepare.

  • 2 tablespoons cocoa, 10 pieces
  • 1 mamey seed, cut in half lengthwise, crushed slightly
  • 2 1/2 cups hominy corn
  • honey, or sugar

  • Heat griddle over medium-high heat and toast cocoa seeds for 5 minutes. Stir constantly until charred. Remove peel with a cloth.
  • Toast mamey seed and set aside.
  • Grind all the seeds and hominy corn in a food processor or metate (mealing stone) into a semi-thick paste.
  • For the tejate: In a bowl or large pot, add paste and pour water little by little. Stir constantly with your hand to incorporate air and froth the tejate. Add water until a light consistency is obtained.
  • Serve authentic tejate in a gourd bowl or glass and add sugar to taste.
