Banana Amaranth Atole

  • 2 tablespoons butter
  • 1 cup banana, cut into round slices 
  • 1 cup amaranth
  • 1 cup piloncillo, shredded 
  • 1 liter cow's milk
  • 1 stick cinnamon
  • some amaranth, for garnish

  • In a small pot over medium heat, heat banana and butter. Add amaranth and piloncillo and heat for 5 minutes until caramelized. Add cow’s milk and cinnamon and bring to a boil for 5 minutes.
  • Transfer previous mixture to a blender and blend until smooth. Bring back blended mixture to the pot and cook for 10 minutes until thickened. Adjust the flavor with piloncillo. Serve banana amaranth atole garnished with amaranth.
