  • 3 cups ice cubes
  • 1 1/2 cucumbers, peeled, cut into round slices 
  • 1/2 cups lime juice
  • 3/4 cups water
  • 4 tablespoons monk fruit
  • 6 slices lime, for the rim 
  • 1/4 cups piquín chile, for the rim 
  • some cucumber, cut into round slices, for garnish
  • some lime, cut into wheels, for garnish

  • In a blender, combine ice cubes, cucumbers, lime juice, water, and sugar and blend until smooth. Set aside.
  • Wet the rim of a glass with lime juice and dip it in piquín chile to create an even rim. Garnish with lime wheels.
  • Serve cucumber shaved ice with piquín chile and garnish with lime wheels and cucumber slices.
