  • Preheat oven to 392 °F.
  • For the pineapple chipotle glazed ham: Combine brown sugar, jam, chipotle chile, nutmeg, ginger, pineapple juice, salt, and pepper in a blender and blend until smooth.
  • In a small pot over medium heat, cook blended mixture until reduced by half.
  • Place ham on a baking sheet and cut it in diagonal to make diamond cuts. Spoon previous mixture over and garnish with canned pineapple and cherries.
  • For the orange glazed ham: In a hot skillet with butter, cook ginger, onion, jam, apple cider vinegar, orange juice, and cinnamon until reduced by half. Add orange peel and rosemary, cook for 3 more minutes, and season.
  • On an aluminum foil-lined baking sheet, wrap ham in bacon and cover with aluminum foil. Bake for 30 minutes. Remove from oven. Stud bacon with cloves. Spoon previous preparation over and bake for 35 more minutes, basting ham with the drippings constantly. Remove from oven and garnish with orange, cherries, and fresh thyme. Serve.
  • For the mustard & cranberry glazed ham: In a skillet over medium heat, melt butter and cook garlic, mustard, and ¾ of cranberry juice. Hydrate cornstarch with the remaining cranberry juice, and add it to the preparation. Add cranberries, sugar, and thyme. Cook until thickened and season.
  • Place ham on a baking sheet and cut the outer layer with straight lines. Brush with old style mustard. Spoon previous preparation over and bake for 1 hour. Remove from oven, serve, and garnish with arugula and raspberries.
  • For the honey glazed ham: In a small pot over medium heat, cook honey, nutmeg, clove, and sugar until reduced by half and thickened. Set aside.
  • Place ham on a baking sheet. Cut outer layer in diagonal to make diamond cuts and stud with cloves. Spoon honey sauce over ham and bake for 1 hour basting constantly. Remove from oven, serve, and garnish with spinach, apple, and cherry tomato.
