Glazed Ham with Pineapple Sauce

  • 4 chipotle chiles in adobo sauce
  • 1 1/2 cups pineapple, chopped
  • 3/4 cups raw sugar
  • 1 cup pineapple juice
  • 1 cup bacon, finely chopped
  • 1/2 cups onion, finely chopped
  • 1/2 cups dried fruit, for stuffing
  • 1/2 cups Manchego cheese, cut into cubes

  • Preheat oven to 356 ºF.
  • For the pineapple sauce: Combine chipotle chiles, pineapple, raw sugar, and pineapple juice in a blender. Blend until smooth.
  • In a skillet, fry bacon over medium heat until golden brown. Add onion and pineapple sauce. Cook over low heat for 10 minutes until slightly caramelized.
  • Using a small knife, poke 1.8-inch deep holes all over the ham. Use dried fruits and Manchego cheese to stuff the ham. Season with salt and pepper.
  • Use kitchen twine to tie ham and place on a baking sheet. Brush with pineapple sauce generously. Wrap in aluminum foil and bake for an hour.
  • Remove aluminum foil. Spoon drippings over ham. Bake again uncovered until the top caramelizes. Let rest before cutting. Serve the glazed ham in pineapple sauce with mashed potatoes and salad.
