Authentic Huevos Motuleños

  • 3 tomatoes, roasted
  • 2 Habanero chiles, roasted
  • 1/2 onions
  • 1 cup fresh cilantro
  • 1 pinch salt
  • 1/4 cups vegetable oil
  • 8 corn tortillas
  • 8 eggs
  • 1 cup refried black beans
  • 1/4 cups turkey deli ham, breast, cut into cubes
  • 1/4 cups queso fresco, crumbled
  • 1/4 cups peas, blanched
  • 1 serrano chile
  • 1 plantain, cut into round slices
  • 1 avocado, diced
  • fresh cilantro, for garnish

  • In a blender, combine tomatoes, Habanero chiles, white onion, and cilantro. Season and blend to a smooth sauce.
  • In a skillet over medium heat, heat oil and fry tortillas without turning them into tostadas. Remove and set aside.
  • In the same skillet, fry two eggs making sure the yolk is tender. Remove and set aside.
  • Spread refried beans on a tortilla. Place the fried eggs on top and spoon the sauce over. Place turkey breast deli ham, queso fresco, peas, and serrano chile round slices on top.
  • Serve authentic huevos motuleños garnished with plantain, avocado cubes, and cilantro.
