Spicy Skillet Eggs

  • 2 cloves garlic
  • 5 guajillo chiles, trimmed and seeded
  • 4 morita chiles, trimmed and seeded
  • 6 tomatoes, cut into quarters
  • 2 cups vegetable broth
  • 1/4 teaspoons ground cumin
  • salt

  • 6 eggs
  • 1 cup asadero cheese
  • some cilantro, finely chopped, for garnish
  • some tortilla chips, for garnish

  • For the guajillo and morita chile sauce: Heat a skillet over medium heat. Add vegetable oil and fry onion and garlic for a few minutes. Add guajillo chiles, morita chiles, and tomatoes and cook for 10 minutes. Transfer ingredients to a blender, add vegetable broth, and blend until smooth. Pour into skillet and fry. Add cumin, salt, and pepper and cook for 10 more minutes.
  • For the skillet eggs: Crack eggs into the sauce and season each one with salt and pepper; cook for 5 minutes.
  • Serve spicy skillet eggs individually. Add asadero cheese, garnish with cilantro, and serve with totopos.
