  • In a skillet, add vegetable oil and fry pasilla chiles for 4 to 5 minutes until charred. Remove from oil and drain on a paper towel-lined plate. Using your hands, tear pasilla chiles apart.
  • In the same skillet, fry onion, garlic, and tomatillos for 5 minutes. Remove onion, garlic and tomatillos from oil. 
  • Transfer all the ingredients to a blender, except for the beer and orange. Add a bit of water.
  • Pour salsa borracha into the skillet and cook for 5 minutes.
  • Pour salsa borracha into a bowl and add the juice of half an orange and the beer. Serve fiery salsa borracha.
