Authentic Mexican Corn on the Cob

Corn on the cob is one of the most classic street foods in Mexico! Slathered with mayonnaise and cheese, corn on the cob is hard to resist. The good news is you can easily prepare them at home!

  • 8 cups water
  • 6 ears corn
  • 2 sprigs epazote
  • 1 cup mayonnaise
  • 1 cup queso fresco, shredded
  • piquín chile
  • salt
  • lime

  • In a pot over medium heat, pour water and cook corn with epazote sprigs.
  • Heat a griddle over high heat. Roast corn until charred. Remove corn from griddle.
  • On a cutting board, insert a wooden skewer on the corn. Reserve.
  • Shred cheese and brush mayonnaise on corns. Sprinkle queso fresco and piquín chile to taste. Add lime juice. Finish with a touch of salt.
