  • 2 tablespoons vegetable oil
  • 1 cup white rice
  • 1 cup tomato
  • 1/4 onions, cut into quarters
  • 2 cloves garlic
  • 1 serrano chile, trimmed and seeded

  • 1 tablespoon butter
  • 1/4 cups yellow corn kernels
  • 1/4 cups peas
  • 1/4 cups carrot, precooked, cut into small-sized cubes

  • Gently rinse rice to remove excess starch and keep grains from breaking.
  • Fry rice with a dash of oil until slightly golden.
  • Combine tomato, garlic, onion, salt, pepper, vegetable broth, and serrano chile in a blender and blend until smooth.
  • Pour tomato purée over the rice using a fine-mesh sieve.
  • Add a small-sized cube of butter for more flavor and texture. Add yellow corn kernels, peas, and precooked carrots.
  • Bring to a boil, cover, and lower to low heat. Let authentic Mexican red rice cook for about 25 minutes.
