Healthy Mexican Corn on the Cob

  • 8 cups water
  • 6 ears corn
  • 2 sprigs epazote
  • 6 tablespoons low-fat mayonnaise
  • 1 cup queso fresco, shredded
  • some piquín chile
  • some salt
  • some lime

  • In a pot over medium heat, pour water and cook corn with epazote sprigs. 
  • Heat a griddle over high heat. Roast corn until charred. Remove corn from griddle. 
  • For assembling healthy Mexican corn on the cob: On a cutting board, insert a wooden skewer on the corn. Reserve. 
  • Shred cheese and brush low-fat mayonnaise on corns. Sprinkle queso fresco and piquín chile to taste. Add lime juice. Finish with a touch of salt.
