  • For the corn on the cob: Bring a large pot of water to a boil. Add corn, salt, and cook until tender for about 25 minutes. Cool and reserve until ready to use.
  • For the bacon mayo: In a bowl, mix mayonnaise, mustard, bacon, lemon juice and pepper until incorporated. Reserve until ready to use.
  • Insert a wooden stick in each elotito, the stick will work as a handle. Coat the elotitos with bacon mayonnaise. Sprinkle with fresh cheese and chili powder. Squeeze a bit of lime juice over the elotitos and garnish with parsley.
