  • 5 tablespoons vegetable oil
  • 1 onion, cut into thin round slices
  • 1 cup carrot, cut into thin round slices
  • 20 Jalapeño chiles, cut into strips
  • 5 leaves bay
  • 5 allspice berries
  • 2 cloves garlic, peeled
  • 2 tablespoons coarse salt
  • 3 cups water
  • 1 cup apple cider vinegar

  • In a medium-sized pot heat oil over low heat. Add onion and sautée over 2 minutes.
  • Add carrots and cook for 3 more minutes. Add chiles, bay leaves, garlic, allspice berries, and coarse salt and cook for about 10 minutes.
  • Add apple cider vinegar, water, and cook for 15 more minutes over medium heat.
