An outrageously good flavorful recipe made only possible thanks to the combination of shrimp, sherry, oyster sauce, sugar, and water chestnuts.   • In a food processor, add shrimp and grind to a purée.
  • In a deep bowl, combine previous mixture, chopped water chestnuts, chives, sesame oil, ginger, sugar, sherry, and oyster sauce.
  • Cut wonton wrappers into a 1.9-inch circle with a cookie cutter, if necessary.
  • Stuff wonton wrappers with a tablespoon of stuffing and spread. Fold as a quesadilla and crimp edges with your fingers.
  • In a wok, bring 3 to 4 cups of water to a boil. Place a steamer over boiling water and arrange a bed of lettuce leaves on top.
  • Place dumplings on top making sure they don’t touch each other to keep them from sticking. Cover steamer and cook dumplings for 10 minutes.
