  • 1/2 cups mango gelatin, for the small-sized mango gelatin cubes
  • 1 1/2 cups water, for the small-sized mango gelatin cubes
  • 1 cup water, hot
  • 2 cups chamoy
  • 1/2 cups chile powder
  • 1 cup mango
  • 8 envelopes unflavored gelatin powder, 0.2 oz, melted and hydrated 
  • chamoy, for garnish

  • In a bowl, combine unflavored gelatin powder and hot water until perfectly incorporated. Pour mixture into a rectangular pan and freeze until set. Remove from freezer and cut into medium-sized cubes. Set aside in the fridge.
  • For the chamoy gelatin: In a blender, add hot water, chamoy, chile powder, and mango and blend until smooth. Add unflavored gelatin powder in an even stream. Set aside.
  • In a previously greased mold, add mango and unflavored gelatin small-sized cubes. Pour blended mixture and keep in the fridge until set. Unmold chamoy mango gelatin and garnish with mango small-sized cubes, chamoy, and chile powder in the center.
