  • In a skillet over medium heat, heat vegetable oil, add onion, and cook until translucent. Add drained beans and mash to the desired consistency. Adjust seasoning. Cook beans for 5 minutes and set aside.
  • In another skillet over medium heat, add chorizo and crumble using a wooden spatula to obtain small chunks. Add Jalapeño chile, mix thoroughly, and cook for 5 minutes until chorizo cooks through.
  • Add refried beans to the chorizo mixture and mix thoroughly. Cook for 2 minutes, sprinkle plenty of Manchego cheese on top, and bake for 5 minutes or until broiled.
  • Garnish cheesy chorizo beans with serrano chile and serve with tortilla chips on the side.
