Chicharrón in Red Sauce

  • 8 tomatoes
  • 1/2 onions
  • 3 cloves garlic
  • 4 guajillo chiles, seeded
  • 1 serrano chile, trimmed
  • some vegetable oil
  • salt and pepper
  • 4 cups pork rinds
  • green onion, cut into rings
  • avocado, cut into small-sized cubes 
  • fresh cilantro

  • In a pot with boiling water, cook tomatoes, onion, garlic, guajillo chiles, and serrano chiles until softened. Drain.
  • Transfer previous ingredients to a blender and blend until smooth. In a pot with oil, pour blended mixture and fry for 15 minutes. Season with salt and pepper. Add pork rinds and mix thoroughly.
  • Serve chicharrón in red sauce garnished with green onion rings, avocado, and cilantro. Serve chicharrón in red sauce with beans and tortillas on the side.
