  • 10 tomatillos, cut into quarters
  • 1/2 onions
  • 2 cloves garlic
  • 5 serrano chiles, cut into halves
  • 1 bunch fresh cilantro
  • 2 cups chicken broth
  • 2 tablespoons vegetable oil
  • salt
  • pepper
  • 5 cups pork rinds
  • some corn tortillas
  • some beans, cooked on a pot, for serving

  • For the green sauce: In a pot over medium heat, heat oil and fry tomatillos, onion, garlic, serrano chiles, and cilantro. Pour chicken broth and cook for 10 minutes or until all ingredients are cooked.
  • Transfer tomatillos and chicken broth to a blender and blend until smooth.
  • Heat oil over medium heat. Pour green sauce. Season with salt and pepper and cook for 10 minutes.
  • Add pork rinds and cook for 5 more minutes. Serve homemade chicharron in green sauce with tortillas and beans.
