  • 2 tablespoons vegetable oil
  • 1/4 onions, cut into cubes
  • 2 cloves garlic, peeled
  • 500 grams tomatillo, cut into quarters
  • 2 cuaresmeño chiles, red, trimmed
  • 1 tablespoon cumin seeds
  • 2 cups beef broth
  • 1/4 bunches cilantro
  • salt
  • pepper
  • 3 tablespoons vegetable oil, for cooking the pork
  • 1 kilo pork, cut into cubes
  • 3 potatoes, peeled and cut into quarters
  • cuaresmeño chile, red and cut into slices, for serving
  • cilantro, for garnish

  • In a deep skillet, heat plenty of oil. Fry onion and garlic until they turn translucent. Add tomatillo and Jalapeño chiles and cook over medium-low heat for 5 minutes or until soft. Add cumin and beef broth. Cook for 5 more minutes and remove from heat.
  • Transfer previous mixture to a blender. Add parsley, salt, and pepper. Blend until smooth. Set aside.
  • In the same skillet, heat vegetable oil. Add pork and sear. Add potatoes and pour green sauce. Lower heat and season with salt and pepper. Cook over medium-low heat for 30 minutes.
  • Serve pork and potatoes in green sauce hot and garnish with Jalapeño chile slices and parsley leaves.
