In a deep skillet, heat plenty of oil. Fry onion and garlic until they turn translucent. Add tomatillo and Jalapeño chiles and cook over medium-low heat for 5 minutes or until soft. Add cumin and beef broth. Cook for 5 more minutes and remove from heat.
Transfer previous mixture to a blender. Add parsley, salt, and pepper. Blend until smooth. Set aside.
In the same skillet, heat vegetable oil. Add pork and sear. Add potatoes and pour green sauce. Lower heat and season with salt and pepper. Cook over medium-low heat for 30 minutes.
