Pork Ribs in Green Sauce

  • 1 kilo pork ribs
  • salt and pepper
  • 1 tablespoon vegetable oil, for the green sauce
  • 4 cloves garlic, for the green sauce
  • 1 white onion, cut into chunks, for the green sauce 
  • 8 tomatillos, cut into chunks, for the green sauce 
  • 1 teaspoon cumin, for the green sauce
  • 1/2 cups fresh cilantro, for the green sauce, divided in 2 
  • 4 serrano chiles, trimmed, for the green sauce
  • 1/2 cups chicken broth, for the green sauce  
  • 1 pinch salt
  • 2 cups new potatoes, cooked, cut into halves 
  • 1 cup nopal, cooked, cut into strips 
  • parsley, for garnish

  • Preheat oven to 392 ºF.
  • In a skillet over medium heat, heat oil, and sear pork ribs. Season with salt and pepper. Cook until golden brown and bake for about 35 minutes or until cooked through.
  • For the green sauce: In a deep skillet, heat oil and cook garlic, onion, tomatillos, cumin, half of the cilantro, and serrano chiles. Pour chicken broth into the pot and cook until reduced by half. Transfer ingredients to a blender, add remaining cilantro and blend until smooth.
  • Remove pork ribs from the oven. Place skillet on the stove and add new potatoes, nopales, and green sauce. Cook for 10 minutes or until thickened. Adjust seasoning.
  • Spoon green sauce over pork ribs and serve with red rice on the side. Garnish pork ribs in green sauce with fresh parsley.
