Sausage Alambre

  • 1 tablespoon vegetable oil
  • 1/2 cups chorizo, crumbled
  • 1/2 cups bacon, cut into small-sized cubes
  • 1/2 cups onion, cut into strips
  • 2 tablespoons garlic, finely chopped
  • 1/2 cups red bell pepper, cut into strips
  • 1/2 cups green bell pepper, cut into strips
  • 2 cups sausages, cut into thick slices
  • 1 cup Manchego cheese
  • 2 avocados, peeled, for the guacamole
  • 1 cucumber, for the guacamole
  • 1/4 cups cilantro, for the guacamole
  • 3 serrano chiles, for the guacamole
  • 1/2 cups lime juice, for the guacamole
  • some tortillas, for serving

  • In a skillet, heat oil and fry chorizo for 5 minutes or until brown. Remove from skillet and set aside.
  • In the same skillet, add bacon, onion, and garlic and fry for 5 minutes until Brown. Add red and green bell peppers and fry for 5 minutes.
  • Season with salt and pepper. Add sausages and fry until brown. Add Manchego cheese, cover, and let melt.
  • For the guacamole: In a blender, combine avocados, cucumber, serrano chiles, and lime juice. Season with salt and blend until smooth. Set aside.
  • Serve sausage alambre on a plate garnished with cilantro leaves.
