  • In a small pot over medium heat, add water and piloncillo and heat until the piloncillo dissolves. Add chipotle chiles and cook for about 40 minutes until completely rehydrated. Drain. Set 5 chipotle chiles aside with a bit of chile soaking water. Set remaining chipotle chiles aside.
  • On a griddle over high heat, roast tomato, garlic, onion, oregano, bay leaf, cumin, clove, and allspice berries until their aroma is released. Do not burn the ingredients.
  • For the adobo sauce: Transfer the 5 chipotle chiles and the chile soaking water to a blender. Add roasted ingredients, marjoram, white vinegar, and salt and blend until smooth.
  • In a small pot over medium heat, heat oil and fry onion until translucent. Add blended mixture and cook for 5 minutes. Add remaining chipotle chiles and cook for 10 minutes. Store homemade chipotle chiles in adobo sauce in an airtight glass jar and let cool. Serve homemade chipotle chiles in adobo sauce with the dish of your choice.
