  • For peeling the plantains: Using a knife cut the ends off the plantains and cut the peel lengthwise for easier removal. Cut the banana flesh into 1.9-inch thick chunks and set aside.
  • In a deep skillet, heat plenty of vegetable oil to cover at least half of each plantain chunk. Fry thoroughly for about 8 minutes over medium-low heat to keep the oil from burning and to keep the plantains from over-browning. Remove plantains from oil and drain on a rack to keep them from getting soggy due to the humidity kept in parchment paper.
  • While still hot, on a chopping board or a flat surface, flatten each plantain chunk with a plate. Make sure to use plenty of strength and a large enough plate. The plate does not need to be lined with plastic bags.
  • Fry flattened plantains in the same hot oil until they turn brown. Drain on a paper towel-lined plate to remove excess oil and season with salt. Serve tostones as a side dish or as an appetizer with your favorite salsa.
