  • In a food processor, grind cauliflower until “rice” is obtained.
  • In a skillet over medium heat, heat olive oil, and fry onion and garlic. Add cauliflower rice and cook for some minutes or until tender. Season with salt and pepper. Set aside.
  • In a skillet over medium heat, heat oil, add onion and garlic, and cook for 2 minutes. Add chicken and cook on both sides. Add lemons and lime juice and cook for 15 minutes or until cooked through.
  • On a plate, place a bed of cauliflower rice, top with chicken breast and lemons, and garnish with chopped parsley. Serve lemon chicken with cauliflower rice.
