Deep-Fried Bean Quesadillas with Red Salsa

  • 1/2 kilos masa dough

  • 2 cups asadero cheese, cut into sticks

  • For the red salsa: In a blender combine tomato, serrano chile, onion, garlic, and chicken broth and blend until smooth. In a pot over medium heat, heat oil. Transfer sauce into the pot and cook for about 30 minutes or until thick. Season with salt.
  • In a skillet over medium heat, fry bacon until golden brown. Add onion and refried beans and cook for 10 minutes. Season.
  • In a bowl, mix masa dough and water. Season with salt and add baking powder.
  • Using a tortilla press or two wooden chopping boards, form tortillas. Stuff tortillas with beans and asadero cheese. Fold in half to form a quesadilla and fry in hot oil for 5 minutes or until brown. Drain on a paper towel-lined plate.
  • Serve quesadillas on a soup plate and spoon red salsa over. Garnish deep-fried bean quesadillas with lettuce, cream, cheese, and red onion rings.
