Deep-Fried Zucchini Blossom Quesadillas

These classic deep-fried quesadillas are a great Mexican snack. The delish stuffing made with zucchini blossoms, a touch of epazote, and Oaxaca cheese is best combined with a spicy salsa!

  • 2 cups corn masa flour
  • 1/4 cups wheat flour
  • 1/8 cups vegetable oil
  • some water
  • 1/4 teaspoons salt
  • 1 teaspoon baking powder
  • 1 tablespoon vegetable oil
  • 1/2 cups onion, sliced
  • 2 cloves garlic, finely chopped
  • 2 cups zucchini blossoms, washed, rinsed, and chopped
  • 1/4 cups epazote, finely chopped
  • 1 pinch salt
  • 1 cup Oaxaca cheese, shredded
  • 1 cup vegetable oil, for frying
  • 1 cup lettuce, cut into thin strips
  • 1/4 cups sour cream
  • 1 cup queso fresco
  • 1/4 cups green salsa

  • For the dough: In a bowl, combine corn and wheat flour with oil, water, salt, and baking powder. Knead by hand and add more water if needed until the dough is well incorporated. Reserve.
  • For the zucchini blossom stuffing: Heat over medium heat in a medium skillet with oil. Add white onion, garlic, zucchini blossom, and epazote. Cook for 5 minutes. Season. Cool and reserve.
  • For the quesadillas: Make tortillas and stuff them with Oaxaca cheese and zucchini blossom stuffing to create a quesadilla. Make all the quesadillas and reserve.
  • Heat vegetable oil in a small pot. Deep-fry quesadillas until crunchy. Pat dry excess oil.
  • Open the quesadillas. Top with lettuce, sour cream, cheese, and salsa.
