Easy Pupusas Salvadoreñas

Salvadoran pupusas are a traditional dish from El Salvador, although they are also popular in other Latin American countries where the recipe has been adapted with different ingredients. While pupusas are traditionally made with masa dough and filled with cheese, they can also be prepared with rice and different stews. A crispy and tasty snack, Salvadoran pupusas are served with a traditional Salvadoran cabbage relish that will surely delight your senses.

  • 4 tomatoes, for the salsa
  • 1 cuaresmeño chile, for the salsa

  • 4 árbol chiles, trimmed and seeded, for the salsa

  • 1/2 cups cuaresmeño chile, cut into round slices, for the Salvadoran cabbage relish
  • 1 1/2 cups carrot, shredded, for the Salvadoran cabbage relish
  • 1 teaspoon oregano, for the Salvadoran cabbage relish

  • 1/2 cups apple cider vinegar, for the Salvadoran cabbage relish
  • 1 cup refried beans
  • 1 cup cheese
  • 1/2 kilos masa dough, prepared with salt and water.

  • For the salsa: In a pot with boiling water, cook tomatoes, cuaresmeño chile, red onion, and árbol chile for 5 minutes. Remove from heat and cool for some minutes.
  • Transfer cooked ingredients and oregano to a blender and blend until smooth. Season with a bit of salt.
  • In a skillet, fry sauce over medium heat for 5 minutes.
  • For the Salvadoran cabbage relish: In a bowl mix cabbage, red onion, cuaresmeño chile, carrot, oregano, salt, apple cider vinegar, and lukewarm water. Let sit for 10 minutes.
  • For the stuffing: Mix cheese with refried beans.
  • For the Salvadoran pupusas: Take a portion of masa dough and make a small ball. Hollow out the center and flatten the sides. Stuff with beans and cheese mixture. Close and flatten in a round shape.
  • In a hot griddle over medium heat, cook pupusas for 10 minutes.
  • Serve Salvadoran pupusas topped with Salvadoran cabbage relish and red salsa.
