Al Pastor Pizza

  • 3 cups flour, for the pizza dough
  • 1 tablespoon baking powder, for the pizza dough
  • 1 teaspoon salt, for the pizza dough
  • 1 teaspoon oregano, for the pizza dough

  • 3 guajillo chiles, trimmed, seeded, and rehydrated, for the al pastor marinade
  • 2 cloves garlic, for the al pastor marinade
  • 1/2 packages achiote, for the al pastor marinade
  • 1 cup orange juice, for the al pastor marinade
  • 1/4 cups white vinegar, for the al pastor marinade
  • 1 teaspoon cumin, for the al pastor marinade
  • 1 teaspoon oregano, for the al pastor marinade
  • 3 allspice berries, for the al pastor marinade
  • 3/4 kilos pork
  • 2 tablespoons vegetable oil, for cooking the pork
  • some flour, for rolling out dough
  • 2 cups Manchego cheese, for the pizza
  • 1 cup canned pineapple, cut into small-sized cubes
  • 1/2 cups white onion, thinly sliced 
  • some fresh cilantro, for garnish
  • limes, for serving
  • some green salsa, for serving

  • For the pizza dough: In a mixer, add flour, baking powder, salt, oregano, and water and mix for 5 minutes or until a homogeneous dough is obtained. Set aside.
  • In a blender, add guajillo chile, garlic, achiote, orange juice, white vinegar, cumin, oregano, and allspice berries and blend until smooth. In a bowl, pour blended mixture and add pork. Marinate for 1 hour.
  • In a skillet, heat oil over medium heat and add marinated pork. Season with salt and pepper. Let cool and set aside.
  • On a floured surface, roll out dough until it is 0.1-inch thick. Cut dough to the same size as the pizza pan.
  • Place cheese, al pastor meat, pineapple, and onion on top. Bake for 15 minutes at 392 °F.
  • Serve al pastor pizza hot with limes and green salsa garnished with cilantro.
