  • 1 teaspoon pepper, for the marinade
  • 1 teaspoon dried oregano, for the marinade

  • 1 kilo pork, steak, cut into cubes
  • 1 tablespoon vegetable oil
  • 1 pineapple
  • 20 slices bacon
  • onion, for garnish
  • fresh cilantro, for garnish
  • lime, for garnish
  • tortillas, for serving
  • red salsa, for serving

  • Preheat oven to 352 °F.
  • Combine guajillo chile, achiote paste, vinegar, orange juice, garlic powder, pepper, oregano, and salt in a blender and blend until smooth.
  • Pour the mixture over the meat and marinate for 20 minutes.
  • In a skillet over low heat, add oil. Cook the meat for 10 minutes or until cooked through. Reserve.
  • On a cutting board, peel the pineapple leaving the crown untouched. Hollow the pineapple using a knife and spoon. Fill pineapple with meat. Wrap with bacon slices and secure with toothpicks. Bake for 20 minutes until bacon browns and turning the pineapple occasionally.
  • Slice the pineapple. Serve with onion, cilantro, and tortillas on side.
