  • 5 serrano chiles, for the green sauce
  • 1 clove garlic, for the green sauce
  • 1 teaspoon cumin powder, for the green sauce
  • 1 cup chicken broth, for the pork carnitas
  • 1 sprig fresh cilantro, for the green sauce

  • For the green sauce: In a pot, heat lard. Fry tomatillos, onion, serrano chiles, and garlic. Cook until tomatillos change color. Add chicken broth and cilantro. Cook for 5 more minutes. Remove from heat. Cool slightly. Blend and reserve.
  • For the pork carnitas: In a pot, heat lard. Add meat, orange, evaporated milk, orange juice, aromatic herbs, garlic head, and sea salt. Cook over medium heat for 90 minutes or until the liquid evaporates.
  • Slightly fry meat until it browns. Strain excess fat. Pour in green sauce and cook for 15 more minutes. Season if needed.
  • Serve authentic carnitas in green sauce very hot. Garnish with finely chopped onion and cilantro leaves.
