  • 4 eggs
  • 2 pinches salt
  • 1 pinch pepper
  • 1/2 cups sour cream, for the sauce
  • 1 tablespoon chipotle chile in adobo sauce, ground, for the sauce

  • 4 slices American cheese
  • 4 bagels

  • In a skillet over medium heat, fry bacon until crispy. Drain on a paper towel-lined plate to remove excess oil. Set aside.
  • Whisk eggs and season with salt and pepper. In the same skillet and with the fat rendered out by bacon, cook eggs until set, stirring constantly. Set aside.
  • For the sauce: Mix cream, chipotle chile, and salt.
  • Spread a bit of chipotle sauce on the bagel. Add a slice of cheese, scrambled eggs, and two strips of bacon in each breakfast bagel with bacon and scrambled eggs.
