  • In a skillet over medium heat, heat oil and cook onion for 5 minutes. Add tomato and chorizo and cook for 10 more minutes. Add egg and cook for 10 more minutes or until cooked through.
  • On a chopping board, spread flour tortillas with refried beans. Stuff with egg and chorizo mixture and fold the short ends in. Wrap tightly to keep the stuffing from spilling. Arrange burritos in a casserole. Set aside.
  • Brush burritos with butter. Top with cheese and broil in the oven at 356 °F for 10 minutes or until golden brown.
