Coca-Cola Pork Loin

  • 1 cup prunes
  • 1/3 cups chipotle chile
  • 2 cloves garlic
  • 1/4 onions
  • 2 allspice berries
  • 1 teaspoon salt
  • 4 cups cola, ½ cup for blending and 3 ½ cups for baking
  • 800 grams pork loin
  • 1 tablespoon vegetable oil
  • 1/2 cups onion, finely chopped
  • 2 cups new potatoes, cut into halves
  • some parsley, finely chopped, for garnish

  • Preheat oven to 392 °F.
  • For the sauce: Combine prunes, chipotle chile, garlic, onion, allspice, salt, and ½ cup of cola in a blender. Blend to a thick sauce.
  • On a chopping board, truss pork loin. Brush with previous mixture generously.
  • Heat oil in a skillet over medium heat. Fry onion, add pork loin, and sear on both sides. Brush generously with prune sauce.
  • Place pork loin in a baking dish. Brush with the remaining sauce. Add potatoes, salt, and cola.
  • Cover with aluminum foil. Bake for 45 minutes or until pork loin has an inner temperature of 149 °F.
  • Remove from the oven. On a chopping board, cut pork loin medallions. Serve with potatoes. Garnish coca-cola pork loin with chopped parsley.
