Cochinita Pibil Mixiotes

  • 1/2 pieces achiote, for the marinade
  • 1 tablespoon oregano, for the marinade
  • 1 teaspoon cumin powder, for the marinade
  • 1 teaspoon cinnamon powder, for the marinade

  • 1 cup orange juice, for the marinade
  • 1/4 cups vinegar, for the marinade
  • 1 kilo pork chump
  • banana leaves

  • For the marinade: In a blender, combine achiote paste, cumin, cinnamon powder, salt, pepper, orange juice, and vinegar and blend until smooth. Pour marinade over the pork chump and let marinate for 2 hours.
  • On a griddle, roast banana leaves until they turn color slightly and soften. Set aside.
  • On a chopping board, place parchment paper and top with a banana leaf. Add marinated pork chump and wrap.
  • In a steamer, arrange authentic cochinita pibil mixiotes and cook for 1 hour.
  • Serve authentic cochinita pibil mixiotes with pickled onions.
