  • In a pot over medium heat, heat oil and fry onion, garlic, tomatillo, and morita chile until slightly brown. Pour in chicken broth, add cilantro, and cook for 10 minutes. Let cool.
  • Transfer previous preparation to a blender and blend until smooth. Set aside.
  • In a pot over medium heat, heat oil and fry longaniza for 10 minutes or until brown. Add potatoes and fry for 5 more minutes. Pour in chicken broth, season with salt and pepper, and cook for 10 more minutes.
  • Serve longaniza hash in morita sauce garnished with cilantro sprouts and with beans and rice on the side.
