Oven-Baked Cochinita Pibil

A delicacy from the Yucatán Peninsula in Mexico, cochinita pibil is traditionally prepared by marinating a suckling pig in achiote and orange juice and burying it in a stoned-lined pit. The tender slow roasted pork is pulled and served in tacos topped with pickled red onions.   • 1/2 cups water
  • 1 cup orange juice, bitter
  • 3 tablespoons apple cider vinegar
  • 100 grams achiote
  • 1/4 white onions
  • 1 clove garlic
  • 1 teaspoon oregano
  • 1/2 teaspoons cumin
  • 20 grams salt
  • 1 1/2 kilos pork, cut into chunks
  • 1 leaf banana
  • 3 black peppercorns

  • Preheat oven over 374 °F.
  • Combine water, orange juice, vinegar, achiote, onion, garlic, pepper, oregano, cumin, and salt in a blender and blend.
  • Marinate pork meat for 30 minutes with the mixture and mix well.
  • Bake for 30 minutes over 374 °F. Cover with banana leaves.
  • Remove banana leaves. Spoon sauce over the cochinita and serve in a clay dish lined with banana leaves.
