Pork Roast with Creamy Chipotle Sauce

  • 1/4 cups chile powder
  • 1/2 cups vegetable oil
  • 2 tablespoons garlic, finely chopped
  • 1 tablespoon thyme
  • 1 kilo pork loin
  • 1 cup whipping cream
  • 1/2 cups cow's milk
  • 1 cup cream cheese
  • 5 chipotle chiles, trimmed, seeded, and rehydrated
  • 1/2 cups chipotle chile in adobo sauce
  • 1 clove garlic
  • 1/8 onions
  • some salt
  • some pepper
  • 1/2 tablespoons oregano
  • 1 teaspoon nutmeg
  • some parsley, for garnish

  • Preheat the oven at 356 °F.
  • In a bowl, mix chile powder, oil, garlic, and thyme.
  • On a chopping board, truss pork loin. Place it in a baking dish. Season with salt and pepper. Cover with chiles mixture. Bake for 40 minutes or until cooked through.
  • For the chipotle sauce: Combine cream, milk, cream cheese, dried chipotle, chipotle in adobo sauce, garlic, onion, salt, pepper, oregano, and nutmeg in a blender. Blend to a smooth sauce.
  • In a small pot, cook sauce for 10 minutes or until thick. Set aside.
  • On a chopping board, cut pork loin into slices.
  • Serve pork loin on a plate with sauce spooned over. Garnish with parsley. Serve pork roast with creamy chipotle sauce with mashed potatoes.
