Pressure-Cooker Carnitas

  • 1 1/2 kilos lard
  • 1 kilo pork ribs
  • 1 kilo pork, lean
  • 1/2 cups orange juice
  • 1 orange, cut in half
  • 1 cup evaporated milk
  • 1/4 cups salt
  • 1 bunch herb bundle
  • 1 tablespoon allspice berries
  • 4 cloves garlic
  • 1/2 onions
  • some corn tortillas
  • fresh cilantro, finely chopped, for garnish
  • onion, finely chopped, for garnish
  • lime, cut into halves, for serving
  • green salsa

  • In a pressure cooker, heat lard until perfectly melted. Add pork ribs and lean pork.
  • Add orange juice, half an orange, evaporated milk, salt, herb bundle, allspice berries, garlic, and onion.
  • Secure the lid of the pressure cooker and cook for 1 hour or until pork is cooked through.
  • Stuff tortillas with pressure-cooker carnitas to make tacos and serve with cilantro, onion, green salsa, and lime.
