Serrano Ham Croquettes

  • 1 cup butter, cut into cubes
  • 250 grams serrano ham, chopped into small-sized cubes
  • 2 cups flour
  • 2 cups milk
  • 1 teaspoon nutmeg
  • salt
  • pepper
  • 2 cups flour, for flouring
  • 2 eggs, for the batter
  • 2 cups breadcrumbs, for breading
  • some vegetable oil, for frying

  • For the serrano ham croquettes: In a skillet, melt butter over medium heat and brown serrano ham. Add flour and pour in the milk little by little. Cook over medium heat while stirring until the sauce begins to thicken. Use a whisk to incorporate evenly. Switch to a wooden spoon and add nutmeg, salt, and pepper. Cook for 10 minutes stirring constantly until thick.
  • Pour mixture into a container or tray and spread over the entire surface with a silicone spatula. Cover with plastic wrap to prevent a crust from forming. Let cool to room temperature and refrigerate for at least 4 hours.
  • For assembling the serrano ham croquettes: Once mixture is solid, remove plastic wrap. Flour and cut into strips with a knife. Unmold carefully. Cut strips into smaller squares to form the croquettes. Flour your hands to make it easier.
  • Dip croquettes in egg and coat with breadcrumbs. Fry in hot vegetable oil for at least 6 minutes and drain on paper towels to remove excess oil.
  • Serve serrano ham croquettes with the dressing of your choice, olives, or French fries. Enjoy with a cold beer.
