Spicy Tequila Pork Ribs

  • 1 tablespoon allspice berry, ground, for the rub
  • 13 cascabel chiles, roasted and ground, for the rub
  • 2 tablespoons cayenne pepper, for the rub
  • 1 tablespoon cumin, for the rub
  • 1 tablespoon oregano, for the rub
  • 5 tablespoons garlic, in flakes, for the rub
  • 3 tablespoons mustard
  • 1 pork ribs, 4.4 - 6.6 pounds, for the marinade
  • 1 cup raw sugar
  • 1/2 cups butter
  • 1/2 cups Tequila
  • 1/4 cups BBQ sauce

  • Preheat oven to 356 ºF.
  • For the rub: In a bowl mix smoked salt, garlic powder, onion powder, allspice berry, cascabel chiles, cayenne pepper, cumin, oregano, and garlic flakes.
  • Place pork ribs in a baking dish and brush with mustard and rub generously. Bake for an hour and remove from the oven.
  • Place aluminum foil on a wooden chopping board. Add raw sugar, butter, and BBQ sauce at the center of the board. Place pork ribs on top of the mixture and add Tequila. Wrap ribs with aluminum foil.
  • Bake pork ribs for 2 hours or until soft. Remove from the oven, let sit for a minute. Cut spicy Tequila pork ribs into slices and serve.
