  • 2 kilos pork loin, trimmed, roll-cut

  • Preheat oven to 356 °F.
  • For the stuffing: In a skillet, fry bacon. Add onion, garlic, apples, raisins, dried fruits, almonds, and pecans. Cook for 10 minutes. Season with salt and pepper. Let cool and set aside.
  • For the adobo sauce: Combine ancho chile, guajillo chile, chipotle chile, onion, garlic, oregano, and allspice in a blender. Blend until smooth.
  • Heat oil in a skillet over medium heat. Pour adobo, cook for some minutes and season to taste.
  • On a wooden chopping board, season pork loin with salt and pepper. Add stuffing, roll up, and truss with kitchen twine.
  • Place on a baking sheet. Brush pork loin with adobo. Cover with aluminum foil. Bake for about 1 hour or until cooked through.
  • Cut into slices. Serve stuffed adobo pork loin with salad.
