Stuffed Pork Loin with Tamarind Sauce

  • 1 pork loin, 6.6 lbs, trimmed
  • 1/4 cups almonds, for stuffing the pork loin
  • 1/4 cups prunes, pitted, for stuffing the pork loin

  • 2 morita chiles, charred, rehydrated in hot water, for the tamarind sauce
  • 1/2 cups piloncillo, shredded, for the tamarind sauce
  • 3 cups tamarind concentrate, for the tamarind sauce
  • 2 tablespoons fresh thyme, for the tamarind sauce
  • 3 tablespoons apple cider vinegar, for the tamarind sauce
  • 1 teaspoon allspice berry, for the tamarind sauce
  • 1/4 cups chicken broth, for the tamarind sauce
  • 1/4 teaspoons clove, for the tamarind sauce
  • 1 tablespoon butter

  • Preheat oven to 392 °F. On a chopping board, place pork loin. Using a knife, poke holes all over the meat. Insert almonds, prunes, apricots, and garlic cloves in each hole. Sprinkle pork loin with Sassón® complete seasoning. Set aside.
  • On a baking sheet with aluminum foil, arrange bacon. Place pork loin, wrap with aluminum foil, and bake for 40 minutes.
  • Remove from the oven and unwrap. Bake for 20 more minutes until bacon browns. Set aside to let the drippings rest.
  • For the tamarind sauce: Combine all the ingredients for the sauce in a blender and blend to a smooth sauce.
  • Heat butter in a skillet over medium heat. Add tamarind sauce. Cook for 10 minutes until slightly reduced. Remove from heat. Set aside.
  • On a chopping board, cut pork loin into slices. Serve on a plate with mashed potatoes. Spoon tamarind sauce over pork loin. Garnish with fresh thyme.
