Chipotle Rice

  • 3 tomatoes
  • 4 chipotle chiles in adobo sauce
  • 1/4 cups onion
  • 1 garlic
  • 1 cup chicken broth
  • some salt
  • some pepper
  • 2 cups rice, soaked and rinsed
  • some vegetable oil
  • 3 cups chicken broth
  • 1/4 cups corn kernels
  • 1/4 cups peas
  • 1/4 cups carrot, cut into small-sized cubes 
  • some epazote
  • 1 chipotle chile, dried

  • In a blender, combine tomato, chipotle chile, onion, garlic, 1 cup of chicken broth, salt, and pepper, and blend until smooth. Set aside.
  • In a pot, heat oil over medium heat and fry rice. Stir ocassionally. Be careful not to break it. Once rice turns golden brown, drain on a paper towel-lined plate to remove excess oil. Pour tomato mixture and let rice slightly absorb it. Add remaining chicken broth, vegetables, epazote, and dried chipotle chile.
  • Once it has come to a boil, cover, and lower heat. Cook for 20 to 30 minutes or until rice is cooked through and the liquid has been completely absorbed. Let chipotle rice sit for 10 minutes before serving.
