How to Make Hominy for Pozole

  • 1 kilo hominy
  • 2 tablespoons lime
  • 2 cups water, for dissolving the pickling lime
  • some water, for cooking the maize

  • Remove any debris (straws, stones, or black kernels) from the dried cacahuazintle maize kernels. Rinse and set aside.
  • In a large bowl, combine maize kernels, water, and pickling lime. Stir until pickling lime is dissolved and set aside. You may notice tiny air bubbles rising to the surface.
  • Transfer to a large pot and cook for two hours or until maize kernels are soft and silky. Let cool.
  • Rinse and hull maize kernels.
